New to PV installations when installing PV systems is the cable requried to be type PV cable or can standard 600V THHN be used?

Which wires are you talking about? There's lots of wires in a PV installation, some of which can be THHN (or several other ratings, depending on location, etc) and some of which must be PV wire.

Because you mentioned 600 volts, I assume you're asking about exposed string wiring? That must be PV wire.

PV wire is required by code for exposed wiring in ungrounded PV systems (690.35(D)). Otherwise, USE-2 is acceptable. Once you get into conduit, you may transition to THHN-2. You cannot use THHN (or THHN-2) for exposed wiring and never could.

The drawings and specificatons inidcate a local disc. at the PV array on the roof [ungrounded type] and conduit from the disc. on the roof into the building where the PV will be utilized, there was no specificaoitn on the cable type and was not sure if non-pv cable can be provided from the roof mounted disc. sw. to the DC converter located in the building, of if THHN is acceptable to be used on a PV / DC system, the entire run will be installed in conduit?

If a conductor is in conduit, it does not have to be PV wire. If it is exposed to sunlight and it's in an ungrounded system, it does.
 
THWN-2 in conduit on rooftop. Most THHN-2 will be rated as such also. . Sounds like you guys may be learning the hard way on this one.
