I have an operating room that currently has Hubbellock type receptacles installed. Currently they have a Male hubbellock male cord cap on a SO cord with a Hospital grade 20A female straight blade cord cap on the other end. I was wanting to know if it is allowed to replace the hubbellock type receptacle to a hospital grade type duplex.

As far as code perspective yes, it is fine to change them.

It just makes sence to do that rather than buying those expensive hubbellock receptacles and cord caps and make these jumpers.
 
When these receptacles are in an operating room on an Isloation Panel, that is fed thru a transfer switch for emergency backup do these receptacles need to be identified by being red in color.

They must be identified but red is not a requirement, the identification means is up to the hospital or AHJ.

The Critical Branch receptacles must also be tagged with the panel and circuit number, see 517.19(A)
