Three questions..
When remoting a sub-panel into an 'out building'(stable), How far down into the ground does the underground feeder cable need to be? What kind of 'ground' does this remote panel need? Do I need to know about any other 'specific' requirements for this type of application?

Try 300.5 (assuming 600V or below)for burial depth, Look at 250.32 and 50, and 52 to mention a few.
