In some late 50's/early 60's homes I've worked in, NM cable with an EGC was used in only parts of some circuits. For example, in a bathroom remodel, the circuit home run (with EGC) from the panel went to the bath light fixture; from there to the switch (3-cond. for the sw. leg) and for the rest of the circuit, there was no EGC.
I'm sure the kitchen was done the same way: run cable with the EGC to the necessary boxes and no further.
