We have been doing work on alot of commercial kitchens lately using shunt-trip breakers for equipment under the hoods, and in the kitchen area with an ansul FP system where in code does it say what has to be protected with shunt trip and what does not?

Re: Shunt Trip Breakers

I am not sure of the exact article number but it is part of NFPA under extinguishing agents. I believe it states equipment whose ignition is from an electrical source needs to be shunt-tripped.
