Split main panel to two subpanels?

Hi all,

I'm trying to figure out how to best distribute the power between multiple buildings. Trying to gather information and formulate a plan before I engage the electrician. I plan to do the trenching and lay the wire, then get the electrician to hook everything up. This is out in the country, so I'm not pulling permits and getting inspections. Needs to be safe and reliable, but not necessarily conforming to every letter of the code. I'm sure I can rely on the electrician to make sure it's 'right'.

My meter sits on a pole in the yard with 125A service, that originally serviced a travel trailer years ago.
It now has a breaker panel beneath the meter that feeds the well and a small house via a 60A breaker on the pole and subpanel on the house.
We will be adding a bigger house to the property and upgrading the service to 200A.
My plan is to leave the meter on the pole where it is (moving the meter will likely be cost-prohibitive), and run URD to each structure from the pole. And I would like at least 100A service to each structure (realizing total loads need to be less than 200A).

What kind of box do I need on the pole to split the service in this manner?
Do I need 100A/125A breakers on the pole, and/or should the main breakers be located in the subpanels?
