I have seen sprinkler head being covered similar to the photo attached. My question is, what is the purpose of covering sprinkler head like this? Would it affect the normal operation of sprinkler and its ability to detect heat?

The cover is for aesthetics. There is a low melting temp metal between the mounting strap and the cover that melts when it reaches a certain temperature so It does not impact the sprinkler operation.

And if they ever get paint or drywall mud or anything like that on them, they have to be replaced per manufacturer.
Viking et al now offer a service where they will provide cover plates that are painted to your spec if you give them the RAL number. I can't recall the minimum number, but the pricing wasn't that bad.
