How do I know how big of a sub panel I can install? Is there calculations?

There is no limit on the size of a subpanel. However there is a limit on the loads that can be supplied, based on the power that can be supplied to the subpanel.

Yes. The subpanel size (aka rating) cannot be less than the demand load on its feeder. In Article 220 you will calculate the demand load on said feeder.
