Tap vs feed from panel

Adding in a sub panel for an addition. Currently there is a 200amp ATS main that goes to a junction box. Using Polaris connector there is 100 amp house panel tapped off this 200. The 200 continues to feed 200amps to garage. The 100amp house panel has some room but wasn't enough for addition. The house panel currently has a 60amp feeding another sub panel in the barn.

My question is should I go off the 100amp house panel with another 100amp to feed addition? Or use 4 port Polaris connector and come right off 200amp feed.

I'm currently leaning towards tapping off the 200amp main but wanted to see if others had opinion on it.
Thanks

Main panel in house has a breaker barn does not its breaker is in main house panel. But yes load is under 100 it's mostly a gas house.
I already have the sub panel for the house it has 100amp main in it.

Yes to tap rules are followed.

Garage doesn't really have that much but it is a 40x48 and some welders and compressors but nothing with continuous loads. Thought was to have the power there if needed.

Honestly everything thing could fit in the main house panel but it would be pretty full and I rather just have a new panel so everything can be nice and clean and inspected easily.

Assuming barn is a separate structure it still needs 1 to 6 disconnecting means at the structure. More than 6 branch circuits would require a main breaker at the structure.
It is separate structure it is 6 or less I believe it's a small panel but I'm not touching that one at all.

You can't "tap a tap". If the 100 amp tap from the ATS feeds the 100 amp MB house panel you can't tap onto that but would need to go back to the ATS. ALL of the taps would need to meet the respective tap rules in regard to length, etc.

Yes. It would not be tap on tap. Out of the ATS to a junction box in that junction box would be the tap for the (2) 100 amp panels then the 200amp would continue into garage.
