I am going to use a 120V wall mounted thermostat (the ones that are used for baseboard heaters) to control an exhaust fan in a communication closet. However, I was thinking about it today and realized that it may not work because I want the fan to turn ON when the temperature in the closet get high the fan to turn OFF. But I don't think this will work. I think I need a thermostat that is used for cooling, similar to an attic fan but for a wall mount.

Am I correct? What am I missing?
