Is there any reason I wouldn't be able to run a 1inch emt with 3-three phase circuits in that conduit.

That would be at least 9 conductors. Will they all physically fit (annex C)? Will you meet the derating requirements for having more than three current carrying conductors in the conduit (Table 310.15(B)(3)(a))?
There might be other issues as well. For example, it is generally considered a bad idea to run multiple VFD motor circuits in the same conduit.
