Three Pole for a Two Pole Load

Anybody know a reason why I can't feed a 1Ø, 2W transformer primary from a three-pole breaker? I was thinking it would make it easier to balance the 3Ø panel we're coming out of because I can pick which phase leg I'm not using.

Not a problem with the exception of eating up one slot in the panel.
