I want 240 line to line. I don't care if it has a high leg or not. If I pull 120 off of it I will just be careful not to use the high leg.

can I use a delta to wye transformer on my 480 wye primary? i think i have before

It doesn't matter if the primary source is 480 wye, or 480 delta. The transformer only sees the line to line voltage and both the wye source and the delta source gives you 480 volts line to line.

Agreed. And this statement also applies to the 240v secondary.

Which conductor to bond/ground depends on your load's needs.
