If MC cable was allowed and some of these units were above accessible drop ceiling(VAV's) would you use MC cable? They call for conduit which I know technically is NOT EMT but seems to imply it IMO.

If MC is permitted then use that. You equipment schedule seems to imply that there is a separate conduit for each piece of equipment which is probably not the case. For example the VAV's could possibly all be on one circuit, daisy chained together.

Yes the VAVS share a circuit.
