Brown 16 awg speaker wire probably would work and be easy to hide.

Thank you all. I guess I'm going to suggest to the owner that I run Romex near the back of the horizontal open log joints he left for me, then try and stuff it with fiberglass or something to isolate it from the mortar he will install afterwards. Then for each stubbed out wire, slip a short piece of liquidtight into a surface mounted outlet box.
 
Just a thought, if this is a true log structure, wiring method will need to accommodate for seasonal log movement, (expansion, contraction, as well as shrinkage). Doors, windows, and even stairs are designed for movement that the log structure will have over time and seasonally. Top to bottom movement can be measured in multiple inches when new on multi story home up to average 1/4" per ft wall height when new depending on location.

Well placed and careful usage a 1/2 inch emt could snake near the bottom of the last log and jump up at rafters for lights and switches could be smart ones so there's less multi gang ones but just a single per room with a few picos or something right on the logs
 
Certainly should be able to put something in those spaces.

Thanks, yes, I am hoping to not have to run conduit everywhere. Owner is ok me using conduit around the 8" posts as I go horizontally around the room in that open mortar joint. Hoping to use UF or Romex in the very back of joint and 'insulate' it with something to keep mortar off of it. Maybe I or he can put some styrofoam over it. He is willing to do some labor for us.
 
I think I'd use the MC before I used Romex or UF. Well done EMT would be nice, if it was mine and cost wasn't a big issue I'd do it in rigid

Really? 1/2" EMT right through those posts with steel 1900 boxes in notches cut in those horizontal members. Gonna look like crap otherwise. Owner doesn't get to tell me how to do my work.

I'm with this. Run the conduit _in_ the mortar channel, and through horizontally bored holes in the vertical posts.

Try to minimize the vertical runs.

Question for the professional sparkies: would ENT be suitable embedded in the mortar?
