Your preference interior wiring sub panels?

Just curious what you guys typically do in a dwelling for a sub panel feeder.
Do most of you run SE? Al or Cu.
From what I understand your looking at #2 cu or 1/0 al... for a 100a sub.
This the most common way?
 
I would run a 3-3-3 SE cable w/ground. That way my grounded conductor would be insulated. Also I would have a ground for my sub-panel cause I bonded in my main panel of course, that is unless you have a main disconnect ahead of your main panel then I would bond in the main disconnect and run 4-wires to my main panel.
 
For SE cable you need 1/0 for a 100 amp OCPD. You can use #2 if the OCPD is 80 amps and the load 75 amps or less. This is assuming that the subpanel does not carry the entire load of the dwelling. If it does then #2 is good but some argue that.
 
So many installations have 100 amp ocp for subs. We all know in (residential applications) you barely even come close to reaching the loads needed to overheat this conductor. What's your thoughts?
The 2011 NEC gives you more slack for ser as far as amps because of the temp. rating.
