How about surface mounted box with MC cable behind wall?I’ve used wiremold boxes for that before, but a shallow UT box will also work, but it is tight on wire fill.

I would say no. Box would be flush with the drywall.Is it possible to get a box behind the gyp board? Seems like there would only be about an inch space behind gyp board so I'd say no.

If you have 1-1/2", use the Raco 418 and a 1/2" single gang mud ring. 14.8 cu in plus 3.5 for the mud ring. That will get you #12 NM in and out, a device and use of the box clamps. It will be tight and use every cu in.
Yup and then they'll ask you for a solution. If the boxes had to be flush with the finished wall they could have put them in the concrete.Sometimes you just have to tell the customer "NO".
