Is it possible to get a box behind the gyp board? Seems like there would only be about an inch space behind gyp board so I'd say no.

There are a few options but the box behind the sheetrock with 7/8 channel isn't one of them. If they don't want surface mounted boxes then they'll have to change the wall framing.
 
Just there recently with a pipe in the way. If you have 1-1/2", use the Raco 418 and a 1/2" single gang mud ring. 14.8 cu in plus 3.5 for the mud ring. That will get you #12 NM in and out, a device and use of the box clamps. It will be tight and use every cu in.

Isn't that box 1" deep? How will that fit in a 7/8" space?
 
Most guys would blast out a recess in the concrete for the box. That's OK for a few but if you have a whole lot it doesn't make sense time wise.

I agree, the architect or engineer should have realized that you can't reasonably flush mount receptacles and switches in a wall furred out with hat channel or 1x2s.
