If I'm installing a 225A residential service in Tennessee, would I use 250 or 300 kcmil aluminum conductors? I've never installed anything larger than 200A, which uses 4/0 AL.

If the conductors are supplying all loads see 310.12
250 KCMil aluminum or 3/0 copper work for sure. You can use the 83% ampacity rule if this service or feeder entirely supplies a dwelling which means 250KCMIL is good for 247 amps. 3/0 copper is good for 241 amps. 4/0 aluminum is good for 217 amps.
250 AL is Code acceptable.
