adding an 240 v outlet using a metal box in a finished drywall wall

For adding an 240 v outlet in a finished drywalled office wall, what kind of box do you recommend ? The single gang metal 'remodel boxes' are pretty small for that.

Well, this will depend on the amperage-the voltage is irrelevant. Big difference between a 15 or 20 amp recep. VS a 50 amp as to how to how to specify a box.

Thanks, this one is 20 amp, so a single gang will be ok. What kind of box for a larger amp outlet ?

My answer is still the same on the box.

20a or small 30a would be single gang
Large 30a or 50 would be 2 gangables

Deep as possible in either case. What you lose on the perimeter can be made up in depth

Gangable cut in boxes used with Madison straps is usually the easiest way to go in this application. I agree with James.
