breaker size for 6-2 ROMEX

6-2 Romex is rated for 55 amps. Is it ok to go the next breaker up ( 60 amps)
and why or why not?

6/2 romex --60 degree column (all romex uses 60 degree). article 334.80 You can go to the next higher size breaker if the rating is not a standard size breaker. Article 240.4 (B)

Remember that this lets you _protect_ a conductor with the next higher standard breaker. It does not let you _use_ the conductor at that current rating.

Say you have a 55A conductor. It is okay to put 54A of load on this conductor and protect it with a 60A breaker. It is not okay to put 56A of load on this conductor.

Agreed but how often would this happen. I can't imagine a 60 amp circuit loaded to 56 amps. I guess it happens!! If I had that much load I would probably up my wire to at least 70 amps but more likely 80 or 90 amp rating.
