Conduit support with boxes on every purlin

It should be sufficient but the NEC doesn't see it that way. We decided to use the caddy hangers. They are nothing but for show and code compliance.
That's exactly what I would do. Even if they do nothing the Caddy bars are code compliant, end of story.

mount the box to the purlin on shallow strut just a piece big enough to be the width of the box. come out of the box with 2 90s going in the opposite direction. use a short strut screwed to the purlin to support the pipes with strut clips

If you're going to do that, why not leave the strut out of the equation and fasten the box directly to the purlin, and, fasten the pipe directly to the purlin with a minie or a 1 hole strap?
