square one
my brother is working on a restaurant job that has a 1 phase, 240 v service, 34 kva padmount xfmr. From the secondary side of the xfmr they ran 3 500mcm copper wires to a 4 bank meter socket that has 4 200 amp load side circut breakers. From each 200 amp breaker they ran 4/0 ser cable to 200 amp panels. Most of the kitchen equipment is gas fired, the biggest load is 2 ten ton AC units. It seems to me that 4 100 amp panels would be the max for this situation. Thanks in advance for any help.

Overkill services seem to be the norm. And NEC calculated services will be larger than necessary anyway. So either way it's overkill. ;)

Suppose the building was built for 4 tenants, but the restaurant is now the single occupant?

I suppose that is possible. If the building was built for 4 tenants, and the services installed prior to the restaurant taking over, then they may have problems with the services being grouped together if they did not provide service disconnects at the meters.
