Do you typically install single receptacle or a duplex receptacle in the cabinet above the range for the microwave?

Duplex. $ is mainly why.

I like plastic handy-boxes for this, and haven't seen a single-receptacle plate for them.

Can be one a single 20 amp circuit if the two units together do not exceed 20 amps.

Two singles or one duplex. The duplex would require simultaneous disconnect of the two circuits on a single yoke.

We always run 2 circuits with a duplex on each. This allows more room for bulky or right angle cord caps than a single shared duplex.
