Can you take a 100A main breaker panel, remove the main breaker, install a 200A main breaker (same brand) and run 200A through the panel???

Square D Homeline 125A 30 space panel and
Square D Homeline 200A 30 space panel are identical except for the breaker size. All the busses are the same, grounding bars are the same, etc. Where can I find on the name plate or spec sheet if upgrading the breaker is acceptable on certain panels? I have not been able to find anything on Schneider website that prohibits it, but I am not convinced.

Want to play it safe? Buy a 200a panel and swap the main breaker and bus assemblies as a unit.

You'll end up with a usable 125a panel, too.

The short answer is no. You have to go with what it says. However the buss assemblies are the same across many different amperages. One user on here, ggunn, says he has documentation from eaton saying (something like) 150 thru 225 all have the same buss. I compared some Siemens factory ordered true panelboards once, 125A and 250A (I know 250 is an odd size, I would think that would be a 400 regardless of what the box said) and the busses were the exact same, I measured them with dial calipers.
