Submerged pump... single phase or two phase?

If it is a threewire pump using the breaker to turn it on would accomplish nothing but a fried pump, if the start winding was left energized all of the time it would overheat and the motor would quickly fail, if the start winding was left disconnected the motor would quickly fail. The only way this would work is if it is a two wire pump that has everything self contained in the pump, but with the readings that you took, it should be a three wire. If you gamble and buy a control box, get at least a 3/4 hp box, (about $50) and wire it color for color to the terminals.( they will have B (black) R (red) Y (yellow) next to the screws. If the pump runs for awhile, then the overload trips, then you know you have a larger pump. If you can, take the amp readings while it is running, and match those with the pump manufactures specifications to calculate the HP of the pump. If it doesn't run , you could have a bad pump. The inside of the control box will tell what values of resistance you should have between each wire.

I just wired a house with a 600' well, cant wait to see what size wire the well guys installed...

Do they run their wire all the way back to the pressure switch up your way? That's how they do it down on the shoreline. Just feed the pressure switch or control box, done.

The last time this topic came up, I was encouraged to see the well guys running #10 for the really long runs.

Depends, they always run the well wire inside the house, and its ALWAYS run inside of plastic water pipe. , but sometimes I have to wire the control box, sometimes I dont....

At 600' they had better run something bigger than #10...

I'm pretty sure they don't make the submersible pump cable bigger than #10. That could be compensated by running larger conductors to the well head.
